A recipe born along the Camino

The first historical record of the tarta de Santiago is from the bishop Pedro Portocarrero, when he first visited the University of Santiago in 1577. Ever since, it became a symbol of the city. The cake travelled in the saddlebags of pilgrims along the Camino and it soon became a symbol of Galician hospitality. Its recipe was already well documented by the 16th century.

What is extraordinary is its simplicity: ground almond, sugar and egg. Nothing more. No wheat flour, no preservatives. And here at Panadería Ana we go a step further: we use 100% natural Galician almond flour, which enhances its original flavour and its rich, moist texture.
